Ingredients:
For the Beef:
1 1/2 lbs beef sirloin, thinly sliced
Salt and pepper to taste
2 tablespoons olive oil
2 tablespoons unsalted butter
For the Sauce:
1 large onion, finely chopped
3 cloves garlic, minced
1 cup mushrooms, sliced
1 tablespoon all-purpose flour
1 cup beef broth
1 cup sour cream
1 tablespoon Dijon mustard
1 tablespoon fresh parsley, chopped

Egg noodles or rice
Instructions:
Prepare the Beef:
Season beef with salt and pepper. Heat olive oil and butter in a large skillet over medium-high heat. Sear beef in batches until browned, then remove and set aside.
Cook the Sauce:
In the same skillet, add onions and cook until soft. Stir in garlic and mushrooms, cooking until mushrooms are browned.
Sprinkle flour over the vegetables and stir to combine. Cook for 1 minute. Gradually add beef broth, stirring constantly, and bring to a simmer.
Finish the Dish:
Return beef to the skillet and simmer for 5-10 minutes until beef is cooked through. Stir in sour cream and Dijon mustard, heating through without boiling.
Serve:
Garnish with chopped parsley. Serve over egg noodles or rice for a comforting meal.
